The fruit is a subtle mix of black current and plum with hints of graphite and black licorice. Cedar and mocha notes on the finish. Medium-full bodied, it shows structure and elegance.
The 2015 Cabernet Sauvignon is from the Duarte-Georgetown Vineyard. This high elevation vineyard has many clonal selections and blenders. I elected to use three different Cabernet clones in this 100% varietal Cabernet. The alpine breezes flowing down off the Sierra Nevada cool these 3000' elevation mountain vineyards and allow the grapes to mature slowly while retaining their natural acidity.
Production Notes
The grapes were sorted and de-stemmed. Musts were cold soaked for 3 days then inoculated with cultured yeasts. Manual punch downs were carried out three times a day, with a total maceration time of 14 days. To showcase the elegant side of Cabernet Sauvignon aging was done in 100% French oak with about 30% new integrating the oak flavors with the fruit. The wine was aged in barrel for 36 months before bottling without fining or filtration.
Winemaker Notes
Like a Kung Fu Master this Cabernet displays strength and balance yet epitomizes grace and harmony. The intensity and depth of fruit is balanced by a silky smooth palate and long finish. This wine layers in notes of black cherry, green peppercorn, espresso beans, and dark chocolate on the finish. It will be exciting to see this wine develop over the next decade.
